Potato Salad

Featuring Paul Newman’s Own® Aioli Mayonnaise


Preparation time: 10 minutes (plus cooling time)
Cooking time: 15 minutes
Serves: 4

INGREDIENTS

600g chat potatoes
60g thinly sliced prosciutto
1 small red onion, thinly sliced
2/3 cup Paul Newman’s Own Mayonnaise
fresh oregano leaves to garnish





RECIPE

1. Boil chat potatoes for 12 minutes or until tender.

2. Drain and rinse under cold water.

3. Heat a large non-stick frypan over a medium-high heat.

4. Cook prosciutto for 1-2 minutes each side or until well done. Drain on kitchen paper. When cool, break into pieces.

5. Cut potatoes in half and place in a large bowl along with prosciutto and onion. Mix to combine.

6. Add Mayonnaise to potatoes and stir gently. Serve garnished with fresh oregano.
