South West Prawn Bruschetta

Featuring Paul Newman’s Own® South West Dressing

INGREDIENTS

1 bake-at-home breadstick
2 tbsp olive oil
300g cooked, peeled medium prawns
1/2 x 250ml bottle Paul Newman’s Own South West Dressing
salt and pepper, to taste
1 small butter lettuce
Extra 1/3 cup Paul Newman’s Own South West Dressing
Snow Pea Sprouts, halved, to garnish



RECIPE

1. Cut breadstick, diagonally, into 1cm thick slices. Brush each side with oil. Arrange bread, in a single layer, over an oven tray.

2. Cook in a moderately hot oven (190C) for about 5 to 6 minutes or until golden brown. Remove and cool.

3. Meanwhile, chop prawns. Place in a bowl with dressing then season with salt and pepper. Mix well.

4. Tear lettuce leaves into the same size as the bread slices.

5. To serve, spread 1 teaspoon extra dressing over each bread slice then top with lettuce. Divide prawns over top. Garnish with snow pea sprouts.
