500g cooked, peeled prawns
1 mango, peeled, thinly sliced
1 red capsicum, thinly sliced
1 small red onion, thinly sliced
1 Lebanese cucumber, halved, thinly sliced
1 small cos lettuce, rinsed
salt and pepper, to taste
1/3 cup chopped fresh coriander
3/4 cup Paul Newman’s Own South West Dressing
Crusty bread, to serve
Preparation time: 10 mins
Serves: 4
1. Combine prawns, mango, capsicum, onion, cucumber and lettuce in a large bowl. Season with salt and pepper. Toss well.
2. Just before serving, drizzle with dressing and sprinkle with coriander. Serve with crusty bread.
