Classic Chicken Salad

Featuring Paul Newman’s Own® Parmesan and Roasted Garlic Dressing


INGREDIENTS

Preparation time: 5 minutes + several hours in the refrigerator
Cooking time: 30 minutes
Serves: 4

2-3 chicken breast fillets (500g)
1 cup Paul Newman's Own Parmesan & Roasted Garlic Dressing *
1 cos lettuce, outer leaves removed
1-1/2 cups Praise croutons
3/4 cups (40g) shaved Parmesan cheese
2 medium tomatoes, sliced



RECIPE

1. Place chicken in glass or ceramic bowl. Pour 1/2 cup Paul Newman's Own Parmesan & Roasted Garlic Dressing over chicken. Cover with plastic wrap. Place in refrigerator and let marinate for several hours or overnight. Remove chicken, and discard marinade.

2. Preheat oven to 200C. Place chicken breasts in a baking dish lined with non-stick baking paper. Bake 30 minutes or until chicken is cooked through. Remove from oven and set aside to cool.

3. Tear lettuce into bite-size pieces. Place in a bowl with 1/4 cup of the dressing and toss to coat. Add croutons and cheese and toss gently to combine. Arrange on serving plates or a platter, then top with tomatoes. Slice chicken and place on top of tomatoes. Drizzle with remaining 1/4 cup dressing.

* Paul Newman's Own Caesar or Creamy Caesar Dressing can be used as well
