1 barbequed chicken
100g mixed lettuce leaves
1/2 cup finely sliced shallots
2 mangoes, sliced
1 Lebanese cucumber, sliced
1/3 cup toasted slivered almonds
1/2 cup Paul Newman’s Own Classic dressing
1. Remove chicken meat from bones. Cut meat into serving size pieces and place in a large bowl
2. Add lettuce, shallots, mango, cucumber, half the almonds and the dressing, Toss gently to combine. Place on a platter or serving plates, then sprinkle with remaining almonds.
